Leek, Shrimp and Dill Salad

Leek and Shrimp


Serves 4
  • 4 Leeks (approx 400g-450g)
  • Trickle of red wine vinegar
  • Lemon juice
  • Salt and black pepper
  • 150 g peeled brown shrimp
  • 4-5 sprigs dill
  • Drizzle extra virgin olive oil


  1. Cut leeks into small pieces that are all the same size. Place on a plate and sprinkle with salt. Put plate into steamer for ten minutes. When leeks have steamed , pop them onto another plate and drizzle with some juice from the first dish. 
  2. With the shrimp in a bowl, add one squeeze of lemon juice, chopped dill and mix together. With hands, sprinkle the shrimp evenly over the leeks. 
  3. Drizzle with the red wine vinegar and olive oil. Add black pepper to taste and the dish is ready to serve.
